I tell you the flavours of chicken and spinach sparkle to life in a delicious and very low calorie version of a typical Spinach Salad .we will use balsamic vinegar in place of red wine vinegar as calories will be same.
Makes 4 servings
1 tablespoon balsamic vinegar
120 gm baby spinach, rinsed and stems removed
300 gm cherry tomatoes, quartered
4 strips turkey rashers, cooked crisp, drained, and crumbled
3 tablespoons olive oil
Step 2: Add spinach leaves to a large bowl.Slice the chicken breast bite-sized pieces and place over spinach.Top the chicken and spinach with the tomatoes and the crumbled turkey rashers and toss all the ingrediants together.
Step 3: In a new bowl ,whisk the olive oil into the balsamic vinegarand shallot mixture.
Step 4: Divide salad into four bowls and dressing on the side.
